raise the roof

I'd like to initiate a little blog party for one of the very important people that helped raise me... my dad.

He's the best guy I know: honest, sincere, hard-working, and caring. And I'm lucky to have him.
So today I'd like to wish him a very Happy Father's Day because he certainly deserves nothing less.

I don't ever know if I'll be able to show him how thankful I am for all that he is and all that he does for me.
He even traveled across the world to visit me in Chile! At least I hope I showed him an excellent time ;).

Dad, I think you're amazing in so many ways, as a father and as a role model to me and my two siblings.
Plus, you love my Momma, another favorite of mine :). Happy (belated) Mother's Day to her, too.

I'm feeling oh so sentimental lately which would explain my last few dedication-like posts. Foodie pictures and thoughts to come soon my dears! Here's a quick photo review of dinner:

I picked up some fresh asparagus and zucchini today from the farmer's market. So for dinner, I covered them with a drizzle of extra virgin olive oil, salt, pepper, and ground mustard, and threw in a few garlic cloves.
Then I let them roast in the oven at 350 degrees for 30 minutes, turning them over half way through.

Once time was up, I took out them out in all their amazing smelling glory and placed them upon a plate alongside a small salad of chopped spinach and shredded carrot. Yum, dinner was served!

But, of course, no special meal was complete without a little vino... it was perfection with the grilled veggies. Delicious dinner :). Afterwards I went with friends to see The Proposal which turned out to be better than your average romantic-comedy; Sandra Bullock and Ryan Reynold have incredible chemistry on screen. Whatever you and your daddys do today, I hope that your Sunday is wonderful. Take care!
