Feliz Cinco de Mayo, friends! You know, it's interesting... being a Mexican-American (with some Colombian and Irish roots) in the United States right now. Immigration is a "hot topic" in politics and opinions on the matter vary greatly. Racism is common, though it remains mostly under wraps. And all the while, Mexican cuisine--authentic and not as much-- is all the rage. As is this holiday.
It's just something to think about... perhaps with a margarita in hand? I'm off to do just that, and later, celebrate this lady's birthday. Have a good one!
