Moving onto less important things! When I'm stressed and lacking sleep, dinner is the first to go. I still eat, of course :) but I've been known to get sucked into the convenience. Luckily, as I've become more conscious of nutrition I've learned that my last meal of the day can be quick, easy,
and, healthy.

Last night, for example, I came home starving! I scoped out the fridge and found a fabulous bean salad from a Sunday night family event. I looked on the stove and found that alongside the chicken cutlets, which I no longer eat, my mom had prepared whole cobs of corn that just smelled amazing.

I looked in my freezer and found a half a bag of frozen broccoli which I then steamed with garlic. Ta-da! Unfortunately the corn was completely lacking in the taste realm so I ended up chucking it and adding more bean salad. Nevertheless it turned out to be great and took me all of 5 minutes to prepare.

A few nights ago the boy came to visit so I ended up cooking for two, speed-cooking that is, I was hungry, again. I roasted zucchini, summer squash, and carrots in the oven while lightly steaming and sautéeing summer snap peas in garlic and extra virgin olive oil. Quite yummy if I do say so myself ;). He also ate two Italian sub slices alongside our small pours of wine. When it comes to making something fast, sticking to basics is a must...
